Ginger Slice

Ingredients
 

  • 2 cups gluten-free plain flour
  • 1 teaspoon gluten-free baking powder
  • 2 teaspoons ground ginger
  • ยฝ cup lightly packed brown sugar
  • ยฝ cup desiccated coconut
  • 125 g dairy-free margarine or butter melted
  • ICING
  • 75 g dairy-free margarine
  • 1/3 cup golden syrup
  • 1ยฝ cups gluten-free icing sugar
  • 2 tablespoons ground ginger
  • ยฝ cup desiccated coconut

Instructions
 

  • Preheat oven to 180ยฐC and line a 27.5cm x 17.5cm brownie pan with baking paper.
  • To prepare the base, place the dry ingredients in a large bowl. Add melted margarine and stir until combined.
  • Press mixture firmly into prepared pan and bake for 30 minutes or until golden brown.
  • To prepare the icing place margarine, golden syrup,icing sugar and ginger in a small saucepan over medium heat. Cook, stirring, until ingredients are melted and combined. Pour over the warm base and spread until even. Sprinkle with desiccated coconut then set aside until icing is set before slicing.
