These Chocolate Rainbow Bars are free-from gluten, dairy, nuts and eggs making them the perfect sweet treat when you need to whip up something for multiple food allergies.
There also minimal cooking involved, so it’s a great one to get the kids involved with too.


Chocolate Rainbow Bars
Ingredients
- 70 g dairy-free margarine
- 300 g gluten-free marshmallows
- 100 g gluten-free dairy-free chocolate pieces
- 5 cups gluten-free Rice Bubbles
- 150 g gluten-free jelly lollies
TOPPING
- 100 g gluten-free dairy-free chocolate pieces
- 60 g Copha
- Gluten-free sprinkles to decorate
Instructions
- Line a 20x30cm (base) pan with baking paper.
- To prepare the bars place margarine, 200g marshmallows and chocolate pieces in a medium saucepan over medium-high heat. Stir until melted and combined.
- Place Rice Bubbles in a large mixing bowl. Add melted marshmallow mixture and jelly lollies. Stir to combine, then press mixture into prepared pan.
- For the topping, place chocolate and copha in a small saucepan over medium high heat. Stir until melted. Pour over rice bubble mixture and top with sprinkles. Cover with plastic wrap and refrigerate for 3 hours or until set, before serving.
