These Chocolate Rainbow Bars are free-from gluten, dairy, nuts and eggs making them the perfect sweet treat when you need to whip up something for multiple food allergies.

Chocolate Rainbow Bars

This colourful gluten-free sweet treat is perfect for getting the kdis involved. It's great for school cake stalls, birthday celebrations, bring-a-plate events. Swap rainbow 100s and 1000S for some Christmas sprinkles and edible decorations (ensure gluten-free) and you have a festive alternative to rocky road that's perfect for gifting (and eating!).

Ingredients
 

  • 70 g dairy-free margarine
  • 300 g gluten-free marshmallows
  • 100 g gluten-free dairy-free chocolate pieces
  • 5 cups gluten-free Rice Bubbles
  • 150 g gluten-free jelly lollies

TOPPING

  • 100 g gluten-free dairy-free chocolate pieces
  • 60 g Copha
  • Gluten-free sprinkles to decorate

Instructions
 

  • Line a 20x30cm (base) pan with baking paper.
  • To prepare the bars place margarine, 200g marshmallows and chocolate pieces in a medium saucepan over medium-high heat. Stir until melted and combined.
  • Place Rice Bubbles in a large mixing bowl. Add melted marshmallow mixture and jelly lollies. Stir to combine, then press mixture into prepared pan.
  • For the topping, place chocolate and copha in a small saucepan over medium high heat. Stir until melted. Pour over rice bubble mixture and top with sprinkles. Cover with plastic wrap and refrigerate for 3 hours or until set, before serving.
