Easy tomato salad
This delicious and oh-so-simple salad is perfect for when you don’t have time to make a full salad. Best of all, it’s made with in season tomatoes, so you can enjoy the best flavours this summer.
- 250 g punnet cherry tomatoes halved
- 1 bunch flat-leaf parsley roughly chopped
- 250 g feta crumbled
- ¼ cup flaked almonds toasted
- 1 lemon zest and juice
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon Dijon mustard
Place halved tomatoes, chopped parsley, feta, almonds and lemon zest in a bowl. Stir to combine.
In a small bowl combine lemon juice, olive oil and mustard. Drizzle over salad and toss to combine. Serve.
