Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 small brown onion finely diced
- 3 rashers gluten-free bacon
- 1 small carrot 65g, grated
- 500 g pork mince
- ⅓ cup gluten-free breadcrumbs
- 2 tablespoons gluten-free Worcestershire sauce
- 2 eggs
- 4 sheets gluten-free puff pastry thawed
- sesame seeds to decorate (optional)
Instructions
- Preheat oven to 200°C and line 2 baking trays with baking paper.
- Heat olive oil in a large saucepan over medium high heat. Add onion and bacon. Sauté for 3 minutes, or until onions begin to soften. Add carrot and cook, stirring, for a further 2 minutes, or until carrot is soft. Remove from pan and transfer mixture to a large bowl.
- Add pork mince, bread crumbs, Worcestershire sauce and 1 egg to the onion mixture and stir to combine. Divide mixture into 8 portions.
- Slice each pastry sheet in half horizontally. Place a portion of mince mixture along the long side of each pastry sheet. Shape the mince into a sausage as you go.
- Break remaining egg into a small bowl and whisk until combined.
- Roll the pastry over the mince to enclose the filling. Brush the final edge with a little beaten egg to help the pastry to stick, then place on lined trays seam side down. Brush with more egg mixture and sprinkle with sesame seeds (if using).
- Bake in preheated oven for 25 minutes or until golden and cooked through.
