Preheat oven to 200°C and line 2 baking trays with baking paper.
Heat olive oil in a large saucepan over medium high heat. Add onion and bacon. Sauté for 3 minutes, or until onions begin to soften. Add carrot and cook, stirring, for a further 2 minutes, or until carrot is soft. Remove from pan and transfer mixture to a large bowl.
Add pork mince, bread crumbs, Worcestershire sauce and 1 egg to the onion mixture and stir to combine. Divide mixture into 8 portions.
Slice each pastry sheet in half horizontally. Place a portion of mince mixture along the long side of each pastry sheet. Shape the mince into a sausage as you go.
Break remaining egg into a small bowl and whisk until combined.
Roll the pastry over the mince to enclose the filling. Brush the final edge with a little beaten egg to help the pastry to stick, then place on lined trays seam side down. Brush with more egg mixture and sprinkle with sesame seeds (if using).
Bake in preheated oven for 25 minutes or until golden and cooked through.
Notes
You can serve "party sized" sausage rolls at your next event. Before placing the sausage rolls on the baking trays, slice into half or thirds. Then proceed as per the recipe.
