Wash broccolini and put into a snap lock bag. Microwave for 60 seconds on High/100% power. Plunge into a bowl of iced cold water. Drain, roughly chop.
Pour the coconut water into blender, add broccolini and remaining ingredients. Blend on high speed until smooth. Pour into glasses or jars and serve.
Notes
Blanching broccolini gives a brighter colour and sweeter flavour. Blanch a few bunches at a time and keep in the fridge all week to make daily smoothies.
