Slow Cooker Lemon Chicken

- 2 tablespoons olive oil
- 10 chicken thighs
- 1 lemon zest and juice
- 1 tablespoon dried oregano
- ½ teaspoon salt
- ½ cup gluten-free chicken stock
- 1 tablespoon Dijon mustard ensure gluten-free
- 2 tablespoons gluten-free cornflour
Instructions
- Heat olive oil in a large frying pan over medium-high heat. Add chicken thighs and brown on both sides. Season chicken with lemon zest, oregano and salt. Remove pan from heat. Transfer chicken thighs to a slow cooker.
- Add lemon juice, chicken stock and mustard to the frying pan with the chicken juices. Stir to combine, then pour over chicken thighs. Cover with lid and cook on low for 5½ hours or high for 2½ hours.
- Remove 3 tablespoons sauce from slow cooker. Combine with cornflour to form a paste. Add a tablespoon of water and stir until runny. Pour cornflour mixture into slow cooker and stir to combine. Cover and cook for a further 30 minutes.
- Serve with mashed potato and steamed vegetables.
